Artichokes

Artichokes!

Artichokes are fucking thistles! Isn’t that bonkers, but also makes total sense because they have all that furries inside them and when you think about it look like all other thistles.

Ways of the old; Artichoke mysticism

In the middle ages they were actually considered medicine and food! Doctors would be keeping them next to the opium and shit (probably).

When the livers of the medieval residents would ail them, artichokes they gave. (hopefully with drawn butter)

Ways of the new what science says now;

“Maybe those well dressed Europeans were on to something!”(probably)

Healthy Mentionables in Artichokes

SILYMARIN

ANTIOXIDANTS

INULIN

FIBER

Silymarin;  may indeed prompt liver health.  An animal study the army did (when did we let the army start doing stuff to animals..?)  stated silymarin may protect the liver from toxic compounds.

_

Animal studies aren’t the best form of evidence, we are people and we do people shit and they are animals and they do animal shit so that is something to remember, but that doesn't mean we have to throw the army babies out with the army bath water.

_

2007 there was another study that concluded  “blah blah artichokes have all the antioxidants!    stop buying berries, they are expensive and they go bad very quickly, and artichokes rule and berries drool (bar wild berries obvy)

_

Inulin; This is a probiotic that may promote good gut health (probably)

It may help with protection against E.coli as well.  I would not test this theory at home.

_

Fiber; One medium sized artichoke gives you between 8-10 grams.  Daily recommended serving is 3og

This post is dedicated the vegetable butter that is an artichoke and Jo robinson Author of Eating on the WIld Side
